How Elements of Byron is reshaping luxury in Byron Bay

From wellness to design, the resort’s decade milestone reflects a broader shift in what guests value

On the 22-hectare property are 202 standalone villas set among interconnecting tea tree creeks, lakes and native fauna.

From forest to foreshore to plate

Azure Bar and Grill, by the lagoon pool, is popular with both guests and locals. Executive chef Craig Robertson, who grew up in the region, has a produce-led philosophy centred on local and foraged ingredients. His culinary direction is dubbed “Forest to Foreshore”. As he told the Byron Shire’s Echo when he took over the kitchen last year: “We’re using what’s on our doorstep: native herbs from the dunes, fresh seafood from the coast, and produce from nearby producers. It’s about honouring this land and what it gives us.”
