Why stay here?
Location, Location, Location! I can’t think of a better way to be woken than to arise to the glorious view of Sydney Harbour while you are having your morning coffee from the serenity of your balcony, breathing in the fresh, crisp air. It feels worlds away from the contrasting hustle and bustle of ships and ferries cruising past beneath you, and the footpath busy with people going about their day – it makes for great people watching.
Design and sustainability notes
The newly renovated one- and two-bedroom apartment-style guest suites, inspired by the surrounding scenic landscapes of Sydney’s iconic harbour, deliver a modern interpretation of classic styling to create a timeless and luxurious space.
“Curated artwork selections, custom furniture pieces and statement lighting elements are selected in a bold monochromatic colour palette, designed to emulate the dappled and reflected light that is so prevalent of the hotel’s harbourside location,” says Porter, from Brisbane-based studio Mel Porter Design, which led the renovation project.
Positioned at the doorstep of Sydney Harbour, the luxury serviced apartments feature a separate bedroom with a spacious lounge area, a state-of-the-art kitchenette, a luxurious bathroom including a spa bath, and sun-drenched balconies offering world-class views of the Sydney Harbour Bridge or Royal Botanic Gardens.
Dining
While there are plenty of dining options around the hotel, Pullman Quay Grand Sydney Harbour plays host to two dining establishments, Q Dining and Hyde Hacienda Sydney Bar + Lounge. A great way to start the evening is with a few drinks at the Hyde Hacienda before heading to dinner. It’s a premier hybrid dinner, drinks and dancing venue and was a totally different experience. With softer colour palettes, neon lighting and lounge-style seating, stopping for a few cocktails here is a must-do. Located on level three, it has stunning harbour views that keep you mesmerised while sipping one of its premium and cheekily named cocktails. My favourite was Pash Me Outside (Gin, elderflower liqueur, passionfruit and vanilla syrup, pineapple juice, lime juice and egg white). The cocktails are all unique – another that caught my attention was the Dancing Panda (vodka, Baileys, espresso, pandan condensed milk).
After a couple of cocktails, we headed to dinner at Q Dining. Taking inspiration from its idyllic location between the Royal Botanic Gardens and Sydney Harbour, the concept for the Q Dining restaurant is ‘where land meets sea.’ Aptly described, dining here felt like we were a stone’s throw away from the water. Working closely with local suppliers to source fresh ingredients, Executive Chef Steven Hartert crafts seasonal menus infused with Australian flavours. From the freshly shucked oysters to the delectable herb-and-ricotta-stuffed zucchini flowers, followed by the Queensland red snapper prepared in a house-made harissa sauce – I was in culinary heaven. And yes, I did save room for the dark chocolate mascarpone mousse served with espresso ice cream!
Spa and wellness
Exclusive to hotel guests, the private recreation deck on level two features a heated lap pool, relaxing spa, and fully equipped gym and sauna, all framed by majestic floor-to-ceiling windows with a spectacular view of East Circular Quay. Additional concierge and valet services, as well as valet parking and porte cochère, are also available to curate a seamless stay in Sydney. If you are driving, valet parking is highly recommended.
