Located in the middle of Sydney’s CBD, it’s a very short walk to Sydney Harbour, the Opera House and botanic gardens. The hotel is very close to George Street, Pitt Street Mall, Martin Place, Circular Quay, The Harbour Bridge, Opera House, Royal Botanic Gardens and The Rocks precinct.

 

Size and style:

A boutique hotel with 31 contemporary guest rooms, including two stylish Penthouse suites. All rooms are equipped with an iPad 2, an Apple TV and BOSE sound system. Guests have access to a private gym and Establishment’s numerous bars and restaurants.

The Garden: A courtyard oasis in Establishment on the ground floor. The Garden is open from 7am – 11am daily for breakfast, with continental buffet and an la carte menu on offer. Bookings are not required but can be made through reception. Alternatively, have breakfast delivered to your room by contacting reception.

Mr. Wong: Layered with timeless colonial furnishings including timber floors with tiled inlay, bamboo-framed French woven chairs and slow turning ceiling fans, Mr. Wong pays homage to classic Chinese influences in a contemporary style. The Cantonese-style menu features over 60 dishes as well as an unrivalled dim sum selection. Sprawled over two levels, the 240 seater Mr. Wong is one of the largest restaurants in the northern end of the Sydney CBD. It offers a range of dining options varying from large group tables through to intimate tables for two and seating at the open kitchen.

Est.: Set within a beautiful heritage dining room with soaring white columns, est. delivers dining on a grand scale. Executive head chef Peter Doyle is renowned for his trademark contemporary Australian food, which is uncluttered, seasonally driven and executed with French-influenced precision.
Sushi e: Adjoining the chic cocktail lounge Hemmesphere on Establishment’s fourth floor, Sushi e is one of the few authentic sushi bars in Sydney and enjoys a dedicated following of sushi fans around the world – including Tokyo.
Hemmesphere: Drawing inspiration from the Ottoman Empire’s sophistication, Hemmesphere is exotically furnished with low, comfortable lounges perfect for intimate conversations and a candlelit terrace ideal for whiling away a balmy Sydney evening.
Guests can also enjoy the supper menu from award-winning Japanese restaurant sushi e which is available from 10:30pm until late.
Palmer & Co: Dapper barmen, dazzling flapper waitresses and live music sets the mood Tuesday through Saturday. Tucked down an alley and hidden underground, Palmer & Co. is a time warp to the era of prohibition with its bootleggers, sly-groggers and the like. The 1920s-style clandestine bar serves up an extensive menu of spirits and specially crafted cocktails.
