The Great Barrier treat

If there’s One&Only reason to head to Hayman Island this October, it’s the epicurean weekend hosted by two of Sydney’s brightest restaurateurs.

From 27-30 October, Executive Chef Brent Savage and Head Sommelier Nick Hildebrandt of the Bentley Group will join the team at One&Only Hayman Island to provide guests with the ultimate culinary experience.

The event will kick off on Thursday night (27 October) with a poolside cocktail party hosted by Savage, Hildebrandt and One&Only Hayman Island General Manager, Scott Williams. Guests will be treated to a signature Bentley cocktail on arrival and canapés amidst spectacular views of the Coral Sea.

Friday night will feature a five-course degustation dinner prepared by Executive Chef Brent Savage and matched to Rathbone wines, courtesy of Sommelier Nick Hildebrandt.

Culminating on Saturday night with a seafood buffet dinner paired with Rathbone wines, the gastronomic weekend promises to showcase local and sustainably farmed produce at its finest.
