Sustainable luxury on the menu

Wild Bush Luxury will host a sustainable culinary weekend with chef James Viles at Bamurru Plains in the Northern Territory this month.

Chef James Viles, of two-hatted NSW restaurant Biota, has partnered with experiential property collection Wild Bush Luxury to host a sustainable food weekend at Bamurru Plains in the Northern Territory.

James will craft a menu of local ingredients inspired by the bush in the Top End, sourcing and using only what is needed from the local area, with a three-day food safari hosted at Bamurru Plains. Guests can partake in food gathering, cooking demonstrations and a wild bush banquet at the chef’s table.

Wild Tastes of the Top End – Safari, Gather & Dine with James Viles will be held over three days at Bamurru Plains from 31 May to 2 June 2016, priced at A$2,895 per adult twin-share (single supplement A$995).

The price includes two nights’ accommodation in one of the property’s ten luxury safari suites, guided wildlife and safari experiences, all meals and beverages, a bespoke tastings menu developed and presented by James Viles and a copy of his new book Biota: Grow, Gather, Cook.
