The night begins with pre-dinner drinks at 6 p.m., enjoyed fireside in the Rhino Room during cooler months or out on the verandah in summer, with sweeping views of the gardens and surrounding mountains. Guests then gather at a beautifully set communal table in the Homestead’s dining room, where crystal glassware and vintage accents evoke the property’s storied past. It is here that Executive Chef Dean Sibthorp introduces the three-course seasonal menu, created from produce grown on-site and sourced from neighbouring farms. The set menu changes regularly, ensuring each evening feels unique and deeply tied to the rhythms of the land.

Dishes are crafted to highlight the integrity of ingredients — from golden pomme dauphinoise served alongside local beef eye fillet to desserts infused with citrus plucked from the Homestead’s own trees. Honey from Mount William’s hives, extra virgin olive oil from its groves, and artisan cheeses and breads from trusted Grampians suppliers often find their way into the courses. For those seeking something even more personal, the station offers the chance to catch trout from its own lake, with the chef preparing the day’s catch for the table.

As each course is presented, Chef Sibthorp shares insights into the ingredients and their provenance, weaving stories of the property’s history and the wider Grampians region. This sense of storytelling elevates the evening beyond a dining event into a cultural exchange — an opportunity to experience the land and its community through food.
