Co-developed by Quark Expeditions and Igapall, a collective that partners with Inuit chefs to showcase Indigenous culinary traditions, the Tundra to Table program offers guests a rare opportunity to immerse themselves in the culinary heritage of Inuit communities in Greenland and Nunavut. The program is led by a team of chefs whose expertise and deep cultural knowledge form its foundation. Working closely with local hunters and food producers, they source ingredients that honor traditional harvesting practices. Through storytelling, the chefs share the cultural significance of each dish, with proceeds benefiting Igapall, the participating chefs, and an organization dedicated to food sovereignty in the Canadian High Arctic.
The Tundra to Table program, co-developed by Igapall and Quark Expeditions, is a unique and culturally enriching initiative that demonstrates how travel can support Indigenous communities and promote sustainable tourism. The program goes beyond the typical travel experience by offering guests the opportunity to engage with Inuit chefs who share their culinary traditions, connect guests with the land through locally sourced ingredients, and deepen their understanding of Inuit culture. Tundra to Table stands out because it transforms dining into a cultural storytelling experience, educating guests about Inuit practices and the land’s bounty.
In partnership with Igapall, Quark Expeditions’ Tundra to Table program transforms Inuit culinary heritage into a unique cultural journey for visitors to Greenland and Nunavut. Inuit chefs prepare traditional dishes aboard Ultramarine while sharing harvesting practices and food traditions in an intimate, interactive setting. Each meal becomes a moment of meaningful exchange, blending culinary storytelling and oral tradition, offering a window into Inuit life. The program supports Indigenous communities by sourcing local ingredients from Inuit hunters and producers, with proceeds benefiting Igapall, participating chefs, and Qajuqturvik, an organization dedicated to food sovereignty in Nunavut.
