Italian-born Sydneysider Francesco Mannelli heads up the kitchen, drawing on more than two decades of experience in some of the best restaurants in Australia and Italy, including the past 10 years in hatted Sydney restaurants. Mode features a stunning central bar serving classic cocktails, luxe banquettes, lounge and dining areas with a design inspired by the 1920s.

Spirits and cocktail bar Grain celebrates the fine craft of drinking in a beautifully designed warm, intimate space with wood, glass and copper features, overlooking Sydney’s George Street. Grain serves cocktails, premium spirits including more than 200 whiskies, craft beers, biodynamic wine and bar food.
Lounge 32: a luxurious residential-style retreat with an elevated position on level 32 offers a private space to relax, dine, entertain and enjoy exclusive privileges. Lounge 32 is reserved for guests staying in Club rooms and Club suites on the top floors of the hotel.
