The youngest chef to earn three Michelin stars is now at COMO’s new Bordeaux château

COMO’s first Bordeaux property pairs a 19th-century Pauillac château with Fabien Ferré, the youngest chef ever to earn three Michelin stars from zero

COMO Hotels & Resorts has opened COMO Cordeillan-Bages in Pauillac – a 28-room restoration of a 19th-century Left Bank château developed in close partnership with the Cazes family, owners of Château Lynch-Bages. Culinary direction comes from Fabien Ferré, who in 2024 became the youngest chef in history to go from zero to three Michelin stars at La Table du Castellet in Provence.

A three-Michelin-star kitchen

Ferré has appointed Mathieu Martin, a native of southwest France, as Executive Chef to lead daily operations at Le Cordeillan, the hotel’s signature restaurant. Menus follow the rhythm of the Médoc’s seasons and the influence of the nearby Atlantic Ocean, leaning towards marine and vegetable expressions. Three, four and six-sequence options are available at lunch and dinner alongside à la carte, with the menu evolving every two to three months. Signature dishes include Atlantic turbot with asparagus, shellfish and lovage, and a Gillardeau oyster with turnip, sorrel and radish.

A wine cellar of more than 1,600 references spans Bordeaux’s great appellations – wines from Château Lynch-Bages alongside rare selections including a 1961 Château Lafite Rothschild and a 2000 Montrachet Grand Cru.

“Opening Le Cordeillan is a rare opportunity to bring together everything I believe in – the richness of local produce, a wine list that truly reflects the region, and the responsibility of giving new life to a place with a strong culinary history,” says Fabien Ferré.

Paola Navone’s interiors

Italian designer Paola Navone has reimagined the interiors with a restrained palette of greys, whites and metallic blues. Tactile textiles, custom furniture and lime-washed walls bring warmth throughout the 28 rooms and suites, including two signature COMO Suites. Le Cordeillan restaurant is flooded with natural light, with monochrome ceramic centrepieces by artist Benoît Breymand offering a sculptural counterpoint to the cuisine. A vineyard-facing terrace extends the dining experience directly into the Médoc landscape.

Into the region

Through the partnership with Château Lynch-Bages, guests receive complimentary daily group tastings and access to bespoke private visits. The hotel sits within easy reach of three of Bordeaux’s five Premiers Crus Classés – Château Lafite Rothschild, Château Latour and Château Mouton-Rothschild – along the Route des Châteaux. The restored village of Bages is a six-minute walk; Atlantic beaches lie 30 kilometres from the property.

COMO Shambhala wellness facilities include a 25-metre heated outdoor pool, gym and sauna.

COMO Cordeillan-Bages is the brand’s third French property, alongside COMO Le Montrachet in Burgundy and COMO Le Beauvallon in the Gulf of St Tropez. The hotel operates seasonally, March to November.
